Directions
- We begin by preparing the filling by mixing the almonds, sugar, and orange blossom water in a bowl until a smooth paste is formed. ≈ 3 min
- Combine the flour, salt, and butter, then add the egg and mix well. ≈ 3 min
- Next, we add the lukewarm water and mix until a soft dough forms. ≈ 3 min
- Let the dough rest for a while.
- Once the dough has rested, we roll it out on a surface dusted with flour, then we shape it into a circle before dividing it into triangles.
- Place a small spoonful of filling along the wide edges of the pastry triangles we have already cut, then we roll each triangle to form a chocolate bread shape, and we repeat the process for all the triangles. ≈ 3 min
- We place the “gazelle’s foot” cookies in a baking dish, after lightly dusting them with flour and buttering the dish. ≈ 2 min
- Brush the triangles with a mixture of beaten eggs and milk, then bake them in the oven at 180 degrees Celsius until they are golden brown.
