- Heat a heavy-bottomed pan (such as a cast-iron skillet) to a medium temperature.
- Add a small amount of oil paint (about a teaspoon per serving), along with a teaspoon of butter. ≈ 3 min
- Increase the flame temperature. ≈ 3 min
- Add the fish fillets, making sure the skin is facing down. ≈ 3 min
- Season generously with salt and pepper. ≈ 2 min
- After 2 to 3 minutes, flip the fish over to the other side.
- Continue to cook for about 3 more minutes, then serve immediately.
