Jam with the peel

  1. Cut off the ends of the figs and blanch them in 80-85 °C water for 5 minutes.
  2. Pour chaque batch, add sugar syrup and cook the jam in two stages.

  1. Peel the figs, sprinkle them with sugar, and let them rest for 8 to 10 hours.
  2. Then, cook over low heat for 50 to 60 minutes, adding the citric acid and vanilla extract towards the end of the cooking time.
