Rice sugar is a fermented product that replaces sugar in desserts and dishes. It requires patience: first, the wheat needs to germinate, and then it needs to ferment with the cooked rice.

Directions
- Rinse the wheat. ≈ 2 min
- Spread it out in a gratin dish, cover with water, and place a dishcloth on top. Let it sit in the dark for 24 hours.
- Rinse and drain the wheat, then return it to the dish. ≈ 2 min
- Allow it to germinate for 24 hours, in complete darkness.
- Rinse again and allow to germinate for another 12 to 24 hours, until the sprouts reach a size of 1 to 2 mm.
- Cook the rice in twice its volume of water in a pressure cooker for 50 minutes.
- Crush the germinated wheat and mix it with the rice when it reaches a temperature of 60 °C. ≈ 4 min
- Cover and let ferment for 12 to 18 hours in a warm place (35 to 45 °C) or in a Norwegian pot.
- You end up with a soft, somewhat liquid mixture. ≈ 3 min
- If it is acidic, the fermentation process has not gone well; however, a slight acidic taste may still be pleasant. ≈ 3 min
- Bring to a boil, then transfer to a food processor.
