Directions

  1. Wash and clean the elderberries. ≈ 8 min
  2. Place them in a pot of water and cook for 10 to 12 minutes.
  3. Dissolve the sugar in the water and add it. ≈ 3 min
  4. To flavor the compote, add a zest of lemon or orange, or a pinch of cinnamon. Once cooled, mix in the grape juice, pour into containers, and store in the refrigerator.
  5. For delicate elderflower varieties: place the fruits in boiling water, remove them immediately, and keep them covered until they cool. The resulting puree will be clear, and the fruits will remain whole.
