A Persian omelette from the Guilan region, featuring fried eggplant, eggs, and turmeric, served with tomatoes, yogurt, and rice.
Varaqeh is a specialty dish from Guilan, in northern Iran. French-fried eggplant slices are coated in an egg batter seasoned with turmeric.

Directions
- Peel the eggplants and cut them into 2 cm thick slices. Salt them and let them sit in a colander to drain out their bitterness. After at least half an hour, rinse them and pat them dry. ≈ 8 min
- Heat oil in a pan and fry the sliced potatoes until golden brown. Then, drain the potatoes on paper towels.
- Brush a pan with oil and arrange the eggplants in a single layer. In a bowl, combine the egg, turmeric, salt, and pepper, and mix until well combined.
- Heat a pan over medium heat, pour in the eggs, and cook until they are set. After about 10 minutes, cut the omelette into pieces and flip them over to cook the other side. Serve with tomatoes, yogurt, and rice.
