A traditional Belgian cake without eggs, resembling an American “crazy cake,” but with a unique flavor. Ideal for those with egg allergies.

This cake was created at the request of my niece, who was looking for a recipe without eggs. It is known as “honey heart” or “bear paw,” although it does not contain honey. Its shape and taste resemble store-bought honey, while its size and preparation method evoke a bear paw.

Directions

  1. In a bowl, combine the dry ingredients (flour, sugar, cinnamon, and baking soda). ≈ 4 min

  4. Bake for 30 minutes at 200 degrees, or until a skewer inserted in the center comes out clean.

  8. If you wish, you can leave it as is, or, if you prefer, you can start by preparing a chocolate glaze. ≈ 3 min

  10. I started by melting it in the microwave until it reached that consistency. ≈ 3 min
  11. Next, I mixed everything together until I achieved a smooth, glossy texture, then I poured the mixture onto a cooled dough and baked it in the oven.

Before you start

  • 80 g of cooking chocolate
  • a small amount of butter or margarine
  • In a bowl, combine the dry ingredients (flour).

  • First, prepare the chocolate glaze.
  • Crush the chocolate and add a little margarine or butter.
  • In a bain-marie or in the microwave (at medium temperature, for about 2 minutes), melt the chocolate.
  • I heated it up in the microwave.
  • However, it didn’t look like it now. Then, I mixed it until it became smooth and shiny.
  • I then prepared a cold tart and some crepes.
  • Allow the cake to cool to room temperature before serving.
