Directions

  1. Choose apples of similar size, but not too large. Peel them, cut them into pieces, and boil them in salted water.
  2. Place the peeled and finely chopped onion in a pot along with the bacon.
  3. Add the drained apples and a little of their cooking liquid, the whisked egg yolks mixed with a little cold water, the strained lemon juice, and the saffron. Simmer for about 15 minutes, or until the apples are a deep yellow color.
