The tirilye kuluru is a Turkish ring-shaped bread with a soft, moist interior, soaked in a sweet syrup and then rolled in sesame seeds. The dough is made with both hard wheat flour and regular wheat flour.

Directions

  1. Use the bowl of your mixer as a container. ≈ 3 min
  2. Pour the water and yeast into the bowl and stir with a spoon until the yeast is fully dissolved. Let it rest for 5 to 6 minutes, until it begins to foam.
  3. Add the remaining ingredients to the bowl: hard wheat flour, all-purpose flour, sugar, and salt. ≈ 3 min
  4. Practice at both a moderate and a high speed. ≈ 4 min
  5. Allow approximately 7 to 8 minutes for the dough to become soft, elastic, and easy to work with.
  6. Thoroughly grease the inside of a mixing bowl. Place the dough inside, cover with cling film, and let it rise for 30 minutes to 1 hour, or until it has doubled in size.
  7. Preheat the oven to 200 °C with a fan.
  8. Fill a bowl with 500g of water, add the sugar, and stir until dissolved. Place the sesame seeds in another bowl. ≈ 10 min
  9. Lightly grease a clean work surface before placing the dough on it. Divide the dough into approximately 10 pieces, each weighing about 80 grams. ≈ 3 min
  10. Create regular balls. Roll each ball by hand into a long sausage shape, then bring the two ends together to form a ring. Try to make them all the same size and shape. ≈ 10 min
  11. Soak each ring in the sweet water, then directly in the sesame.
  12. Place them on 35 x 40 cm baking sheets lined with parchment paper. Bake for approximately 15-20 minutes, or until golden brown.
