A delicious West African dessert made with millet couscous and yogurt, perfect for family gatherings.
The Dêguê, also known as Thiakry in Senegal, is a popular traditional dessert in Côte d’Ivoire, Mali, Guinea, and Senegal. It is made with millet couscous and yogurt, and is refreshing and sweet.

Directions
- Use a steamer, place water in the bottom of the steamer, and bring to a boil.
- Place the millet couscous in a sieve and set it over the steaming pot. Cook the couscous for 25 minutes.
- Transfer the couscous to a large bowl and add the butter, mix well, and let it cool.
- In a separate bowl, combine the yogurt or buttermilk with the sugar and vanilla. ≈ 4 min
- To serve, place the millet couscous in a bowl and add the buttermilk (or sweetened yogurt), then mix well. ≈ 4 min
- Refrigerate and serve very cold.
- If you don’t have couscous made from semolina, you can use regular semolina or wheat flour instead. ≈ 3 min
- Place the millet flour in a large bowl, and use your hand to dampen the flour slightly with water. ≈ 3 min
- Then, rub the flour together to form small balls. ≈ 10 min
- Once all the flour has been transformed into small balls, set aside at room temperature for at least 10 minutes.
- Next, continue the recipe as described above. ≈ 3 min
