Directions

  1. Prepare a container, then mix 100 grams of rice flour with 50 grams of potato starch. ≈ 4 min
  2. Add 50 ml of water, then mix until you have a smooth, lump-free paste. ≈ 4 min
  3. To achieve a characteristic aroma and green color, add a teaspoon of pandan leaf paste. ≈ 3 min
  4. If you don’t have any, use another natural green color as an alternative. ≈ 3 min
  5. Pour obtenir une texture vraiment lisse, pour each the mixture through a sieve. ≈ 3 min
  6. This step is essential for achieving a finer and more elastic texture once consumed. ≈ 3 min
  7. Boil 1 litre of water.
  8. Once the water is boiling, reduce the heat, then slowly pour in the mixture while constantly stirring to prevent it from clumping together.
  9. Let it rest until the dough thickens and forms small balls.
  10. Immediately remove it, then immerse it in cold or ice water to stop the cooling process and maintain a soft texture.
  11. Mix 250 grams of high-quality palm sugar with 250 ml of water, then stir until the sugar is completely dissolved and incorporated into the water. ≈ 4 min
  12. Next, filter the liquid to separate out impurities and residues. ≈ 2 min
  13. This step allows for the production of a purer and more transparent syrup. ≈ 3 min
  14. Heat the sugar solution to boiling, and observe a slight increase in viscosity.
  15. This step allows for the production of a more concentrated syrup that also has a longer shelf life. ≈ 3 min
  16. Once the desired consistency is achieved, remove the container from the heat and allow it to cool completely before using it.
  17. First, prepare a young coconut, then grate the flesh and squeeze it to obtain approximately 200 ml of thick coconut milk. ≈ 8 min
  18. Briefly heat the coconut milk until it is almost boiling, to help preserve its quality and prevent it from spoiling quickly.
  19. Avoid boiling it for too long, as this could cause it to explode.
  20. Next, allow the coconut cream to cool before using it as an addition to the dawet.
  21. First, use a measuring cup to pour out the desired amount of palm sugar syrup, creating a base. ≈ 2 min
  22. Next, add the dawet, which have been soaked in cold water, to the glass. ≈ 3 min
  23. The Dawet Ayu drink from Banjarnegara is also ready to be enjoyed cold, to fully appreciate its refreshing taste. ≈ 3 min
