Daihaku is a traditional Japanese dessert made from mochi, a sticky rice cake, rolled and filled with egg custard or black bean puree. There are many variations, but the most common is the white, light green, or pale pink mochi filled with egg custard. The sizes vary, with an average size of about 1.5 cm and a larger size of about 10 cm. Some varieties contain whole fruits, while others are filled with fruit puree and egg custard or cucumber puree.

Directions
- Prepare the egg cream according to the instructions and form small balls, about the size of a rice grain, making 12 balls. ≈ 10 min
- Prepare a flat surface using a dishcloth and lightly dust it with potato flour to prevent the mochi from sticking. ≈ 4 min
- Place the water and sugar in a microwave-safe container and heat until boiling. Then, add the mochi paste and mix until the mixture starts to rise. Microwave for a total of 4 minutes.
- Spread or flatten the mochi dough into thin slices, and use a knife to cut it into 12 equal portions. ≈ 8 min
- Rub your hands and fingers with potato flour, and spread each portion of mochi as thinly as possible. ≈ 4 min
- Place a ball of egg custard in the center of each mochi portion and roll the mochi around the custard to form a roll. ≈ 10 min
- Coat the daifuku in potato flour and place it on a plate lined with potato flour or parchment paper. ≈ 3 min
- Serve hot or cold, and store in an airtight container. ≈ 2 min
