Directions
- Heat the milk until it is almost boiling, then pour it over half of a vanilla bean and let it steep at room temperature.
- whisk the egg yolks with the sugar (as if preparing a meringue) until the mixture turns pale and forms a ribbon when the whisk is lifted.
- Remove the vanilla from the milk and gradually add it to the egg cream, while continuing to whip. ≈ 4 min
- Gently heat the cream, stirring constantly, and wait until it thickens.
- Place the cream in a container filled with ice to stop the cooking process and continue whipping for a few more minutes. ≈ 4 min
- Serve immediately. ≈ 2 min
- If it is not used quickly, it should be kept warm by placing it in a ≈ 3 min
