Directions
- Whisk the egg yolks with the sugar until the mixture becomes pale and frothy.
- Split the vanilla pod lengthwise, scrape out the small black seeds with the tip of a knife, and add them to the cream. ≈ 3 min
- Bring the cream to a simmer over medium heat, then let it steep, covered, for 10 minutes off the heat.
- Combine the cream with the eggs and sugar, then pour into ramekins. ≈ 4 min
- Bake for 1 hour in a water bath, in the roasting pan filled with hot water, at 150 °C: the cream should be just set, but still slightly wobbly.
- Let it cool completely before transferring it to the refrigerator for at least 2 hours.
- When serving, sprinkle with brown sugar, turbinado sugar, or granulated sugar. ≈ 2 min
- Caramelize the sugar using a torch, under the broiler in the oven, or with a round iron.
- Serve with fruit or a cinnamon stick. ≈ 2 min
