Directions
- Boil lightly salted water for the couscous, about 2 cups.
- Cut the mushrooms into large pieces and sauté them in a dry pan over high heat until they release no more moisture.
- When the water boils: Pour in the couscous (about 2 cups) and then add the two eggs (you can leave the yolks whole). ≈ 3 min
- Once the mushrooms are cooked: Pour generously with olive oil. ≈ 3 min
- Season with salt, pepper, and chopped garlic. ≈ 2 min
- Then, let it rest until the couscous is ready.
