Directions

  1. Return the bacon to the pan and cook over medium-high heat.
  2. Reduce the heat to medium and add the brown sugar, chili powder, coffee, cumin, jalapeños, oregano, and paprika. ≈ 3 min
  3. Cook for 3 minutes, stirring constantly.
  4. Add the onion and cook until it softens for about 5 minutes, stirring frequently.
  5. Add the beef and ground beef, then cook for 8 to 10 minutes, until just cooked through.
  6. In the meantime, prepare the corn bread. ≈ 3 min
  7. Add the tomatoes to the pan and cook for 1 minute, stirring frequently to prevent them from sticking to the bottom.
  8. Adjust the seasoning and remove from the heat. ≈ 2 min
  9. Melt the butter, then let it cool slightly.
  10. Whisk together the butter, egg, and milk. ≈ 4 min
  11. Mix the semolina, flour, and salt together, then add the yeast and baking powder. ≈ 4 min
  12. Pour the liquid mixture over the dry ingredients and mix. ≈ 4 min
  13. Preheat the oven to 220 °C.
  14. Grease a 23 x 30 cm baking dish with cooking spray. ≈ 3 min
  15. Pour the chili into the dish and smooth the surface. ≈ 3 min
  16. Spread the cornmeal mixture evenly over the chili and smooth it out with a large spoon. ≈ 3 min
  17. Bake for approximately 20 minutes, or until the cornbread is cooked through and pulls away from the sides of the pan.
