Kplé Baha Sauce
A traditional Ivorian sauce made with Kplé seeds, served with slow-cooked cassava and wild game meat.
Kplé baha sauce is a traditional recipe from Côte d’Ivoire, made with Kplé seeds, cassava, and various other ingredients. It is typically served with cassava fufu or other side dishes.

Directions
- Peel the cassava ≈ 8 min
- Cut the peeled cassava tubers into large pieces. ≈ 8 min
- Place the slices in a pot with water on the stove. ≈ 3 min
- Let it simmer for 30 minutes, and check to see if it is cooked through.
- I extract the ingredients and grind them in a mortar and pestle. ≈ 3 min
- Clean the fish and meat, then set aside. ≈ 8 min
- Soak the mushrooms, shrimp, and hot peppers in the hot water.
- In a pot, bring the water to a boil.
- Once the mixture comes to a boil, add the meat and cook for 15 minutes.
- Add the fish, shrimp, and mushrooms. ≈ 3 min
- Add the mushroom and shrimp broth, being careful not to pour in any sediment from the bottom. ≈ 3 min
- Salt, cover, and bring to a boil.
- Meanwhile, finely chop the chili pepper and half an onion. ≈ 4 min
- Once boiling, add the mixture, and the tomatoes.
- Cover for 30 minutes
- Meanwhile, in a separate pan, grill the Kplé grains and let them cool.
- After 30 minutes of cooking, remove the tomatoes.
- Crush the garlic in a mortar and pestle, then immediately add it to the sauce. ≈ 4 min
- Crush the Kplé grains, add the cooking liquid, and crush again to obtain a smooth paste. ≈ 4 min
- Carefully remove everything from the sauce (fish, meat, etc.), leaving only the liquid behind. ≈ 3 min
- Add the Kplé paste to the sauce. ≈ 3 min
- Whisk the sauce vigorously. ≈ 4 min
- Once thoroughly mixed, add all the ingredients that were removed from the sauce. ≈ 3 min
- Gently mix. ≈ 4 min
- Let it simmer for 15 minutes… and it’s ready.
