Directions

  1. Soak the chickpeas for 12 hours. Drain them and cook them in fresh water until they are tender.
  2. Place the cod in water for 24 hours, changing the water every 8 hours. Drain it and remove any bones.
  3. Place the garlic cloves and shallots in a pan with olive oil. Cook until golden brown.
  4. In the same pan, add the onion, which has been sautéed in olive oil. Add the crushed chili pepper and cook for 2 minutes. Remove from the heat and mix in the minced garlic, paprika, cooked chickpeas, and saffron.
  5. Gently pan-fry the cod, skin-side down, until it is golden brown on both sides. Remove from the pan and let it rest.
  6. Cook the spinach in a pan with olive oil over low heat. Season with salt.
  7. In a dish, alternate layers of chickpeas and spinach, sprinkling flour between each layer. ≈ 2 min
