This coconut jelly is made using real shredded coconut, infused in boiling milk. The coconut water is used to dissolve the gelatin, and vanilla adds flavor.

Directions
- Bring the milk to a boil and pour it over the shredded coconut, then press well to extract all the milk.
- Melt the gelatin sheets with coconut water (or a small amount of sweetened water) over low heat.
- Combine everything except the sugar and vanilla, then place in the refrigerator to set.
