This German “lost bread,” also known as “rusted knights,” gets its color from cinnamon and sugar. It’s a great way to use up stale bread.

Directions
- Mix the cinnamon and sugar together, then set aside. ≈ 4 min
- Whisk the milk with the eggs, and if you like, with some lemon zest. Add a little sugar if you prefer. ≈ 4 min
- Remove the crusts from the small breads and cut them in half lengthwise. Place them in the egg-milk mixture and let them soak for a while. If the breads are very dry, prepare a little extra of the mixture: they should be well soaked. ≈ 8 min
- If you wish, you can coat them with egg white and breadcrumbs. ≈ 3 min
- Melt the butter in a pan and toast the bread on both sides.
- Immediately sprinkle with the cinnamon and sugar mixture: this is what gives them their reddish-brown color. ≈ 2 min
