These homemade truffles are rich and intensely chocolatey. A combination of milk, butter, and egg yolks creates a smooth ganache, which is then rolled in cocoa powder. They can be made in advance.

Directions
- Melt the chocolate in a mixing bowl. Gradually add the milk over low heat, stirring until you have a smooth, glossy mixture.
- Remove from the heat and allow to cool slightly until the yolks can be incorporated without cooking them. Also, add the butter and work it in until it is perfectly combined.
- Refrigerate for approximately 4 hours.
- Roll the cooled mixture into small balls.
- Roll the balls in the powdered cocoa to coat them evenly. ≈ 10 min
- Store in the refrigerator and consume within 2-3 days.
