Directions
- Preheat the oven to 175 °C.
- Combine the flour, sugar, baking powder, baking soda, and salt. ≈ 4 min
- Combine the mashed banana, eggs, buttermilk, melted butter, and olive oil. ≈ 4 min
- Add the dry ingredients to the wet ingredients, and mix just until combined. Do not overmix. ≈ 4 min
- If you wish, add the chocolate chips and mix. ≈ 4 min
- Prepare the muffin tins by greasing them or lining them with parchment paper. ≈ 3 min
- Divide the dough evenly among the muffin tins, filling them about two-thirds full. ≈ 3 min
- Bake for approximately 20 minutes, or until a toothpick inserted into the center comes out clean.
