Directions
- Soak the rice in water for 4 to 5 hours.
- Drain the potatoes, and mix them with boiling water until you have a smooth, liquid mixture. You can also use rice flour mixed in the same way with boiling water.
- Heat a cast-iron or earthenware griddle over medium heat. Once it’s hot, wipe it down with a little oil paint to prevent the crepe from sticking.
- Pour each portion, spoon a generous amount of rice mixture onto the center of the pan and gently rotate it to create a thin layer. ≈ 3 min
- Immediately crack an egg onto the dough and sprinkle it with a little salt. You can also add chopped green chilies or onions, according to your preference. ≈ 2 min
- Cover and let steam for 4 to 5 minutes over medium heat, until the dough and egg are cooked through.
- Serve hot, alongside homemade mashed potatoes, a tomato chutney, or marinated green chili peppers. ≈ 2 min
