Directions

  1. Chop all the vegetables (bell pepper, zucchini, onion, leek, and garlic) and sauté them until softened.
  2. When they are golden, add the drained, peeled, and diced tomatoes, chickpeas, rice, cumin, and broth until just covered.
  3. Cook until the rice and chickpeas are tender.
  4. Serve with hard-boiled and chopped eggs. ≈ 2 min
