Directions
- Soak the chickpeas for at least 24 hours.
- Drain them thoroughly and allow the water to drain completely. ≈ 2 min
- Place all the chopped chickpeas, onion, garlic, raw potato, parsley, and spices in a food processor, then blend. You don’t need to puree the chickpeas; small pieces are fine.
- The dough should be easy to shape. Use a falafel mold, or simply shape it by hand. ≈ 3 min
- If the dough is too firm, add a little water (¼ to ½ cup) and mix. ≈ 4 min
- Heat a generous amount of oil in a pot over medium heat. The falafel should almost float in the oil.
- If you are using a mold, grease it, fill it with dough using a spoon, and press it to give it its shape. ≈ 3 min
- Dip the falafel balls in the hot oil and let them fry, but be careful not to overheat them so that they cook through.
- Remove them from the oil paint and allow them to drain in a sieve to remove any excess oil paint. ≈ 2 min
