Pokora is a specialty of the Khuzestan region in southwestern Iran. These saffron- and herb-flavored doughnuts are fried in oil until golden brown in just a few minutes.

Directions

  1. Mix the chickpea flour and warm water, stirring with a fork. Add the dissolved saffron and chopped chives. ≈ 4 min
  2. Whisk the eggs with the salt, spices, and pepper for a few minutes, then add them to the mixture. ≈ 4 min
  3. Heat the oil in a pan. Scoop out the paste with a spoon, gradually, and fry it in the oil. Alternatively, you can pour the entire paste into the pan and fry it on both sides.
  4. Place on a plate and serve with the tomato sauce. Add more chili pepper if you prefer a spicier dish. ≈ 2 min
