Coq au vin, with bacon and mushrooms
A classic coq au vin, slow-cooked with Burgundy red wine, pancetta, small onions, and mushrooms, flambéed with cognac, and prepared the day before.
This coq au vin is prepared in several stages: chicken is browned, the wine sauce is reduced, vegetables are sautéed, and then the dish is baked. It’s best to make it the day before.

Directions
Chicken and gravy
- For the chicken stock, place the chicken pieces in a little oil, then let them simmer in the water with the whole onion, 1 carrot, and a few peppercorns. You should end up with approximately 240 ml of stock.
Sauce
- In the pan, sauté the pancetta and bacon fat with butter. Remove the pancetta.
- Add the seasoned chicken pieces, skin-side down, and fry them until they are a golden brown color, then flip them over. This step is essential for the flavor; the pan should remain sticky. Since there isn’t enough space, do this in batches. Remove the chicken, leaving the rendered pork fat, and cut it into pieces.
- Add the chopped onion and mushrooms to the pan, and cook for 5 minutes. Then, add the sliced garlic and immediately flambé with a measure of cognac.
- Return the chicken and pancetta to the pot, then pour in the wine, chicken stock, and vegetable stock. Bring to a boil, add the garlic and herbs, reduce the heat, and simmer for 45 minutes, turning the pieces occasionally.
- Remove the chicken pieces and pour the sauce into a pitcher; place the pitcher in the freezer for 30 minutes to remove the fat. At this point, it is advisable to refrigerate the entire dish overnight.
Decoration
- In the pan, melt some butter with the wild mushrooms, then add the small onions, the remaining carrots, and the celery; cook until the mushrooms are golden brown. Add the asafoetida and flambé with the second measure of cognac.
- Add the sauce from the saucepan to the skillet, along with another crushed clove of garlic, and push the vegetables to the sides. Reduce the sauce until it becomes glossy (about 15 minutes). It may require a little flour, but it should not become thick.
- Pour the half of the sauce into a glass baking dish, add the chicken pieces, then pour the remaining sauce over them; bake in a covered dish at 170 °C for 90 minutes.
- Sprinkle each portion with fresh parsley and serve with asparagus or green beans, steamed potatoes, flat pasta, rice, orzo, or colcannon.
