Directions

  1. Cut the bread slices into approximately 1 cm thick pieces, then lightly toast and butter them.
  2. Place the tortillas at the bottom and on the sides of the container to prevent them from directly cooking on the dough. ≈ 3 min
  3. Bring the piloncillo to a boil with 2 to 2.5 cups of water, a few cinnamon sticks, a strip of orange zest, and a pinch of salt to make a syrup.
  4. Arrange the bread slices in layers, with some space between them, and top with walnuts, cherries, grapes, peanuts, and slices of pork. ≈ 3 min
  5. Spread the dry ricotta cheese and some orange zest over the final layer, then drizzle with honey. ≈ 3 min
  6. Bake at a low temperature for about 30 minutes, leaving the dessert uncovered so that the crust can rise. Reserve some honey to add after baking if needed.
  7. Allow to cool to room temperature and do not cover completely.
