Directions
- Thoroughly wash and dry the pineapple. ≈ 2 min
- Peel and cut into slices about 2 to 3 centimeters thick. ≈ 8 min
- Pour 2 liters of water, add the ingredients and let it rest for 30 minutes.
- In a pot, bring one and a half liters of water to a boil.
- Once the water starts to boil, place the pineapple in (it’s important to create a sudden temperature change).
- Cover with a dishcloth and let it rest for 10 minutes.
- Remove from the heat and allow to cool.
- Remove the slices and, using a knife, remove the core and allow the water to drain. ≈ 2 min
- Book now. ≈ 3 min
- Boil 500 ml of water with 1 kg of sugar and the milk, over medium heat.
- Using a spatula, remove any excess foam. ≈ 3 min
- Once the Cucumis melo is fully ripe (check the texture by dropping a few pieces into a bowl of cold water), add the pieces of Cucumis melo. ≈ 3 min
- Once the boiling starts, remove the pot from the heat and pour the mixture into a container (which should not be made of aluminum).
- Let it rest overnight.
- Put it back in the pot and return it to the heat. ≈ 3 min
- As soon as the water starts to boil, remove the pineapple pieces and place them in a sealed glass container to prevent them from cooling down.
- The puree is then brought back to the desired consistency, and the pineapple is returned to the pot. ≈ 3 min
- Once the boiling resumes, remove the pieces and return them to the glass container. Cover and let them rest overnight.
- Repeat the process for an additional 2 days (to further dry the fruit). ≈ 3 min
- Bring the water, sugar, and milk to a simmer over medium heat.
- Using a spatula, remove any excess foam. ≈ 3 min
- Drain the pineapple juice and dice the pineapple. ≈ 8 min
- Add them to the bowl containing the water, stirring with a wooden spoon until they reach a slightly firmer consistency, but still remain creamy. ≈ 3 min
- Remove from the heat and stir until the sauce thickens. ≈ 4 min
- Using a fork, remove the pieces one at a time (quickly) and place them on an aluminum griddle (similar to those used for pizzas). ≈ 3 min
- Allow to cool to room temperature.
