Candied grapefruit peel (candied grapefruit rind)
A candied treat from Tasikmalaya: grapefruit peels cooked in sugar, resulting in a sweet and slightly sour flavor, and then dried in the sun for two days.
Kalua jeruk is a traditional sweet treat from Tasikmalaya, in West Java, made with grapefruit peel. The result is a sweet and slightly tangy snack.

Directions
- Gather all the ingredients. ≈ 3 min
- Peel the grapefruit, then remove the outer skin and the spongy white flesh. ≈ 8 min
- In a container, mix the settled lime water and alum. ≈ 4 min
- Soak the cleaned peels in this mixture for 4 to 6 hours.
- Next, squeeze the peels until the water is clear, then drain them. ≈ 2 min
- Boil the peels and discard the cooking water. Repeat this process once more.
- Bring the water to a boil and dissolve 200g of sugar in it.
- Add the dark yellow food coloring and the finely chopped citrus peel. ≈ 3 min
- Let it cook for about 30 minutes, remove from the heat, and let it soak overnight.
- Discard the soaking water. ≈ 3 min
- Bring the water to a boil, add the peels along with the remaining 300g of sugar and a bit of food coloring.
- Bring to a boil again until the syrup is fully absorbed.
- Let it rest, then dry it in the sun for 2 days.
- Enjoy the candied peels. ≈ 3 min
