Directions
- Cut the chicken, sausage, and shrimp into bite-sized pieces, then chop the onion, bell pepper, celery, and garlic.
- Heat the olive oil in a pan, then add the chicken and sausage and cook over medium heat until the meat changes color.
- Add the onion, bell pepper, celery, and garlic, and continue cooking until the vegetables are tender.
- Add the Cajun spices, paprika, thyme, salt, and pepper, then the tomatoes. Mix well, stirring constantly. ≈ 4 min
- Add the rice, stir, then pour in the broth. Once the mixture comes to a simmer, reduce the heat, cover, and cook for about 20 minutes.
- When the rice is almost cooked, add the shrimp and continue to cook for another 5 minutes.
- Turn off the heat, let the pot rest for a moment, then sprinkle with chopped parsley.
