Directions

  1. Combine the Cabrales cheese, fresh cheese, milk, and salt in a bowl to create a homogenous mixture. ≈ 4 min
  2. Melt the butter in a saucepan over low heat.
  3. Add the flour and mix until a dough forms. Incorporate the cheese and milk mixture. Continue mixing and cook for 10 to 15 minutes.
  4. Allow the dough to cool completely, ideally for a full day.
  5. Divide the dough into portions and lightly coat each portion with flour, then with beaten eggs, before coating them with breadcrumbs. ≈ 3 min
  6. Heat olive oil in a pan over high heat. Add the breaded cheese pieces and cook until they are golden brown.
  7. Remove the cheese pieces from the pan and drain them on paper towels. ≈ 2 min
