The butter cream is used to decorate and enhance pastries. This sweet version combines a cooked syrup, egg yolks, and softened butter.

Directions
- Mix the sugar with the water. ≈ 4 min
- Bring to a boil and cook until it reaches 121 °C. A thermometer is helpful, but not essential: stick a fork into the boiling sugar. If threads form when you remove the fork, the sugar is ready.
- Separate the eggs and place the yolks, at room temperature, in the bowl of the mixer. Once the sugar is melted, gradually add it to the yolks, at a low speed. ≈ 2 min
- Once the sugar is fully incorporated, beat at high speed until the mixture is completely cool.
- Once the mixture has cooled, gradually incorporate the softened butter, in small pieces.
- Continue to thoroughly grind until you achieve a smooth and uniform paste. ≈ 4 min
