Kavarma is a delicious Bulgarian stew, cooked in the oven. Served in individual portions, it is filled with meat, onions, mushrooms, and other vegetables. This dish is perfect for a family meal or a get-together with friends.

Directions
- Cut the meat into pieces, season it with salt and pepper, and then sprinkle it with flour. ≈ 8 min

- Heat 3 tablespoons of oil paint in a pan and cook the meat pieces over high heat, turning them regularly to ensure they brown evenly.

- Place the meat in a casserole dish. ≈ 3 min

- Finely chop the onions and slice the leek into pieces. ≈ 8 min

- Cook them in the remaining fat over medium heat until they become translucent. ≈ 3 min

- Add the chopped garlic. ≈ 3 min

- Chop the bell pepper into pieces and the mushrooms into slices. ≈ 8 min

- You can also add them, along with the savory options. ≈ 3 min

- Let it simmer for another two minutes, stirring occasionally.

- Next, remove the pan from the heat, add the paprika, and then the tomatoes.

- Cut them into small pieces using a knife or wooden spoon, add the bay leaf, and pour the contents of the pan over the meat in the oven-safe dish. ≈ 3 min

- Season with salt and pepper, add a little vegetable stock to moisten it, and also two tablespoons of oil paint.

- Place it in a preheated oven, set the temperature to 100 degrees, and let it bake for a while.

- After about an hour, check for doneness. ≈ 3 min

- You can also check it an hour later. ≈ 3 min

- The stew is perfect when the meat is tender and the liquid has thickened into a rich, substantial sauce. ≈ 3 min

- Garnish the kavarma with parsley and serve with rice, boiled potatoes, mashed potatoes, French fries, or wholemeal bread.

- Optional: If you are making the Guetche like me, with feta cheese and an egg, serve it in a small ceramic pot with a lid. ≈ 2 min
