Basque-style Breton biscuits with yeast and lemon
A Breton sugar pastry made with yeast and almond flour, flavored with lemon zest, rolled out and then baked at 170 °C to create biscuits.
This Breton-style shortcrust pastry contains a small amount of baking powder to help it rise slightly during baking. It can be used as a base for pie crusts or for making biscuits to accompany tea.

Directions
- Create a well with the flour on the work surface or in a large bowl. ≈ 10 min
- In the center, place the yeast, softened butter, sugar, eggs, lemon zest, almond flour, and salt. ≈ 3 min
- Starting from the center, work gently, gradually incorporating all the ingredients. ≈ 3 min
- Combine everything gently, cover, and refrigerate.
- Once the dough is cold and firm, roll it out on a lightly floured surface to fit a tart tin, or cut it into various shapes for tea biscuits. ≈ 3 min
- Bake in the oven at 170 °C for 15 minutes.
