Directions

  1. Melt the sourdough bread in warm water and let it rest.
  2. whisk the eggs until they are light and fluffy. ≈ 4 min
  3. Add the sugar and mix well. ≈ 4 min
  4. Incorporate the melted butter and mix well, then add the salt. ≈ 4 min
  5. Add the lemon juice and anise extract. ≈ 3 min
  6. Add the water and starter mixture, and mix until well combined. ≈ 4 min
  7. Add the flour, then mix until a smooth, even dough is formed, ready to be kneaded. ≈ 10 min
  8. Mix thoroughly until the dough returns to its original shape when you press it with your finger. ≈ 4 min
  9. allow the dough to rise overnight (12 hours) or until it has doubled in size.
  10. Divide the dough into 7 portions. ≈ 3 min
  11. Give each portion the shape of a doll. ≈ 3 min
  12. Allow to rise for 2 to 3 hours.
  13. Bake at 275–300 °F (140–160 °C) for 15–20 minutes.

  • 58.72 g of hot water
  • 2 lemons, zest and juice
  • 30 ml of anise extract
  • 40.2 g of anise seeds
  • 1 teaspoon of salt
  • 687.5 grams of flour
