Directions
- Preheat the oven to 160 °C.
- In a large stainless steel pan, add 50 ml of bacon grease and add the kidney beans, cooking over medium-high heat.
- Add the dark rum and tilt the pan to ignite. If you don’t have a gas stove, use a lighter to light it.
- Add the molasses, blackstrap molasses, dark brown sugar, salt, black pepper, and dry mustard. Gently mix to combine. ≈ 4 min
- Add the chopped bacon and mix again. ≈ 4 min
- Transfer the mixture to an oven-safe dish and bake in the oven for 1.5 hours.
- During cooking, add blackstrap molasses periodically to prevent it from drying out. ≈ 3 min
