Directions
- In a bowl, combine the eggs, caramelized sugar, oil, sparkling water, flour, baking powder, vanilla sugar, and a little lemon juice to create a smooth batter.
- In a cake pan (approximately 25 x 40 cm), line with parchment paper and spread the batter evenly. ≈ 3 min
- At approximately 175 °C, bake the dough in the oven for about 30 minutes, or until it is golden brown, then let it cool completely.
- Boil the red apple puree with 0.75 litres of water.
- Add the frozen bilberries to the mashed potatoes, mix thoroughly, and let them rest until the bilberries are defrosted.
- Evenly distribute the still-warm dough over the surface. ≈ 3 min
- Allow the cake to cool completely, preferably overnight.
- Whip the cream with pastry cream until it reaches a firm consistency, then add sugar and vanilla to taste. ≈ 4 min
- Next, spread this mixture evenly over the cake. ≈ 3 min
- Place the cookies on a plate and lightly sprinkle them with powdered sugar. ≈ 2 min
