Directions
- The preparation of cranberry juice varies slightly from region to region, but here is a recipe from Greksås, in the Nora mountains, in Västmanland county: ≈ 3 min
- Harvest the berries from the bushes (while wearing gloves!). ≈ 3 min
- Take the berries you harvest with you. ≈ 3 min
- Fill two plastic bags, but don’t overfill them. ≈ 10 min
- Once you’re home, make a few small holes in the bags. ≈ 3 min
- Next, pour allow the water to pass through and remove any potential impurities and used needles, pour in cold water into the bags. ≈ 3 min
- Pour the rinsed rice into a large pot and add water to cover it. ≈ 3 min
- Approximately 10 litres of water would be needed for this amount of rice. ≈ 3 min
- Bring the water to a boil, then turn off the heat.
- Let it rest for 20 minutes to allow the flavors to develop.
- Place a towel around a bucket and use it to filter the mixture. ≈ 2 min
- Place the filtered rice in the garden or in the compost. ≈ 3 min
- Mix sugar, corn syrup, or honey, or combine them. ≈ 4 min
- Calculate a dose of 100 grams (one hectogram) per liter of liquid (i.e., approximately 1 kilogram for 10 liters). ≈ 3 min
- Cool everything down to about 37 degrees.
- Add the yeast (calculate 1.5 grams per liter of beer). ≈ 3 min
- ATTENTION: Do not exceed this amount! ≈ 3 min
- For 10 litres, you will need 15 grams. ≈ 3 min
- (Mix the yeast with a little sugar, then add it to the beer.) ≈ 4 min
- Cover the container and place it in a warm location to allow the fermentation process to proceed properly. ≈ 3 min
- Duration: at least one day, ideally two, but no more. ≈ 3 min
- Remove any foam residue that has formed. ≈ 3 min
- Pour servir, pour each person, pour each bottle (make sure not to shake the bottles so that the sediment doesn’t rise to the top). ≈ 3 min
- Pour finir, pourer the liquid into the bottles once the process is complete. ≈ 3 min
- Next, place the bottles in a warm location to restart the fermentation process (for a few hours!). ≈ 3 min
- It’s now time to seal the bottles, and it’s very important to have traditional, easily removable corks, in case the fermentation becomes too vigorous. ≈ 3 min
- Don’t forget: no screws. ≈ 3 min
- (A bottle with a screw-on cap could explode.) Store the bottles in a cool place for 6 to 8 days.
