Bendu
A traditional Balinese pastry, filled with grated Parmesan cheese and Balinese sugar, wrapped in pandan leaves.
The “bendu” is a traditional Balinese dessert. It consists of tapioca flour filled with grated Parmesan cheese and “unti” (a type of palm sugar), wrapped in pandanus leaves. Although simple, it is often served during religious ceremonies and official events.

Directions
- Rehydrate the pandanus leaves in water and extract the juice.
- Mix the tapioca with salt and pandan leaf juice, adding gradually. ≈ 4 min
- Heat a small earthenware pot over a low flame. Pour in a tablespoon of adonc and flatten it to form an egg shape.
- Remove the egg white if it is cooked. ≈ 3 min
- Peel the Parmesan, grate it, then mix it with sugar, pandan leaves, and salt to make the “unti”. ≈ 8 min
- Place the mixture on the tapioca egg, forming a triangle or a roll. ≈ 10 min
