Directions
- Dissolve the yeast in warm water, then mix until you have a smooth, even consistency.
- Add the sugar, salt, wheat flour, and most of the bread flour or sourdough starter. ≈ 3 min
- Add fat and mix the dough. ≈ 4 min
- Then, gradually add flour, a little at a time, until the dough separates from the sides of the bowl and forms a soft, firm ball. ≈ 10 min
- Let the dough rise, covered, in a warm place until it has doubled in size. ≈ 3 min
- Thoroughly knead the dough and divide it into two or three portions. ≈ 10 min
- Cut the pieces into 40 cm long planks, suitable for forming the base of the fireplace. ≈ 8 min
- Roll the boards onto a reel and place them on a sheet of parchment paper-lined tray to keep them in place. ≈ 3 min
- Use a sharp knife to make diagonal cuts in the large slices of bread. ≈ 3 min
- Bake the sandwiches at 225 °C in the oven, on the middle rack.
- The cooking time is approximately 15 minutes.
- If you want a crispy crust, lightly spray the sandwiches with water several times during cooking. ≈ 3 min
- Let the sandwiches cool on a wire rack, without covering them with a dishcloth.
