Pasta in the shape of small sticks

“Schmalznudeln” are traditional, lard-based pasta, known for their unique and flavorful taste. Here’s a recipe to make them without using pork fat.

Directions
- All utensils and ingredients should be at room temperature. In a mixing bowl, sift the flour and create a well in the center. Add the yeast and 4 tablespoons of lukewarm milk. Gently mix without letting the flour touch the sides of the bowl. Cover with a warm dishcloth and let rise until doubled in volume.
- While the dough is resting, mix one egg yolk with 2 tablespoons of melted butter and a pinch of salt.
- Mix the risen dough with the creamy mass you have obtained. Add 100g of flour. Continue to knead in the bowl until the dough detaches from the sides and forms bubbles.
- Add the dried grapes and gently mix. Allow to rest again until it has doubled in volume.
- Use a spoon to separate the pasta into small, stick-like shapes. Place them on a wooden board dusted with flour. Wipe them with a dishcloth and let them rest for 30 minutes in a warm place.
- Fry the pasta in hot oil, turning once. ≈ 3 min
- Drain and sprinkle with sugar. Serve immediately. ≈ 2 min
