Directions

  1. Wash the Belgian endive and remove the stems. Blanch them in boiling water for 2 minutes, then drain and let them cool.
  2. Cut the Belgian endive into pieces about 2 cm long. ≈ 8 min
  3. Crush the garlic in a mortar and pestle, then add the olive oil, mustard, balsamic vinegar, and salt. Mix well to create a dressing. ≈ 4 min
  4. In a large bowl, place the Belgian endive pieces. Add the tomato slices. Pour the dressing over the mixture and gently toss to combine. ≈ 4 min
  5. Serve immediately or refrigerate for a few hours.
