Directions
- Mix the butter, sugar, eggs, salt and flavoring until you have a frothy batter. Then slowly add the milk, stirring constantly, and mix in about 90% of the flour. The remaining 10% should be sifted very finely with the hartshorn salt and added to the dough at the end. ≈ 4 min
- Pour the batter onto a baking sheet lined with parchment paper, using a cookie cutter or a portion dispenser, or two large spoons. The batter should be thick so that the hartshorn salt is well distributed. If you prefer taller “Américains,” you’ll need to leave out the hartshorn salt and use baking powder instead. ≈ 3 min
- Bake the “Américains” in a preheated oven for 20 to 30 minutes, at about 180 to 200 °C. Once baked, remove them from the pan and set them aside to cool. When cool, they can be topped with fondant (sugar icing) or chocolate glaze, as you prefer.
