Directions
- The beet leaves are peeled and washed until the tough, fibrous part is removed. ≈ 3 min
- They are then cut into small pieces. ≈ 3 min
- In a pot, they are cooked over low heat with a small amount of water, covered, until they soften.
- They are then mashed to form a puree. ≈ 3 min
- A small amount of flour is mixed with oil paint and cooked over low heat until it takes on a light golden color.
- Then, I add beef broth or water, beetroot puree, salt, and chopped mint.
- The entire dish is cooked over low heat for 10 minutes.
- The beets are then cut into pieces and served with toasted bread, either fried in oil or baked in the oven.
