Biersupp, or beer soup, is a regional Alsatian specialty that has been known for three centuries. It is also enjoyed in northern France, Germany, Belgium and the Czech Republic. It is a simple, country-style dish that can be enriched with cream, smoked bacon or Strasbourg sausages.

Directions

  1. Peel and chop the onion. Sweat it in butter in a saucepan. ≈ 8 min
  2. Add the beer and the chicken broth, then bring to a boil.
  3. Stir in the breadcrumbs and spices, and let simmer for ten to thirty minutes.
  4. Cut the bread into croutons and brown them in butter.
  5. Serve hot. ≈ 2 min

  • 40 g butter
  • 1 or 1/2 L meat broth
  • 25 or 33 cl lager or dark beer
  • 125 g light breadcrumbs
  • Nutmeg, salt, pepper
  • Slices of stale bread for croutons
