Directions
- Take the meat out of the refrigerator in advance so that it is at room temperature.
- Lightly salt on a plate. ≈ 2 min
- Heat a small pan with a few drops of oil paint.
- Season the meat with salt, then place it in the hot pan.
- Apply a thin layer of edible gold leaf to all sides before cooking, using the desired cooking time: the meat is cooked when its center reaches 57 to 58 °C.
- Place the dish on the plate and add a pinch of Maldon sea salt. ≈ 2 min
- If you wish, you can collect the juice that has accumulated at the bottom of the pan to make a meat sauce.
- To do this, deglaze with water, brown stock, or wine, then strain, and finally thicken with cornstarch.
