Each thin slice of beef is coated in mustard and rolled around a pickle, a carrot, and a hard-boiled egg. The meatballs are then simmered until they become very tender in a rich brown sauce.

Directions
- Flatten each piece of meat with a mallet until it is thin and wide. Season with salt, pepper, and mustard. ≈ 4 min
- On each slice, place a piece of pickle, carrot, and egg. Roll them up and secure with a toothpick. ≈ 10 min
- Heat the oil and butter in a saucepan, and fry the meatballs. Remove them and set aside on a plate.
- In the remaining fat, add the onion, carrots, celery, and leek. Then add the tomato paste and let it cook.
- Pour in the red wine, the brown sauce, and the brown stock. Add the bay leaf, pepper, and thyme, then season with salt. ≈ 2 min
- Bring to a boil once, then reduce the heat and return the dumplings to the sauce.
- Cover and let simmer until the meat is very tender.
- Remove the toothpicks before serving. ≈ 2 min
