Directions

  1. Combine all the crust ingredients. ≈ 4 min
  2. Press this mixture firmly into the bottom and along the sides of a 23 cm (9 inch) tart tin. ≈ 3 min
  3. Refrigerate for 30 minutes.
  4. Combine the sugar and flour in a double boiler. ≈ 4 min
  5. Add the evaporated milk. ≈ 3 min
  6. Cook until thickened.
  7. Add a small amount of this cream to the beaten egg yolks. ≈ 3 min
  8. Mix well, then return everything to the heat. ≈ 4 min
  9. Continue to stir constantly until the mixture thickens. ≈ 3 min
  10. Add the butter and vanilla. ≈ 3 min
  11. Peel the bananas and slice them into rounds. ≈ 8 min
  12. Arrange them in circular layers within the crust. ≈ 3 min
  13. Pour over the pastry cream. ≈ 3 min
  14. Save for later. ≈ 3 min
  15. Whip the cream until it thickens.
  16. Add the powdered sugar. ≈ 3 min
  17. Top the pie with whipped cream. ≈ 3 min
  18. Serve chilled.
