Directions
- In a large, heavy-bottomed pot, melt the sugar over medium heat, without stirring. Once completely dissolved, add the water and gently mix to form a syrup.
- Add the bananas to the pot and gently mix with a wooden spoon. Reduce the heat.
- Once the mixture starts to simmer, pour the cinnamon over the bananas and mix constantly to ensure even distribution. Add the lemon juice and mix again.
- Cook until the desired consistency is reached, being careful not to break the bananas. Store in the refrigerator.
